Amco 4-channel Baguette/French Bread Pan is manufactured to meet the exacting standards of the toughest commercial bakeries and food service establishments. Each pan is crafted from heavy-gauge aluminized steel, a 3-ply material consisting of two layers of tough corrosion-resistant perforated 3003 aluminum alloy around the durability, strength and superior heat conduction of carbon steel. The frame is supported by a thick, coated reinforcing wire to give the pan additional strength and insure greater durability. Pan has a silicone coating that provides for easy release of baked goods. Coating will darken with use. Pan bottom and sides are perforated for heat circulation creating a crispy, artisan crust on all sides of the loaf. Each channel is 3.88-inch by 26-inch. Makes 4 loaves.

Summary: Good but not great. 2010-04-26
Comment: I got these pans for a bakery I own. Unfortunately they don't fit into a normal 18x26 rolling rack. That leaves them useless lying around your bakery.
Other than that, the perforated bottoms leave holes in bread which makes them look cheap and mass produced.
Like I said, cooks them well, just not great.

Summary: Not What I Expected 2009-12-03
Comment: I purchased this perforated bread pan from Amazon. Unfortunately, when it arrived, it was HUGE. Didn't fit into my 30 inch oven--either width or length. The Amazon web site did not list the size of this pan. As a result, it cost me $7.00 to ship it back. In future, I believe the sizes of things ought to be included in all ads. It looked like a nice pan, though.

Summary: Perfect for my needs 2009-04-25
Comment: I was surprised that I didn't notice how big this pan was but was lucky enough to own my own pizza oven. My first batch of bread made for a neighborhood fundraiser (for a child) was a huge hit, including one woman who claimed it was better than the bread she had in France! The framework of the pan allows it to cool without a separate rack. I look forward to more homemade baguettes.
