Once available only to commercial kitchens, the pan is made of professional-weight aluminized steel, so it won't buckle or bend under intense heat and consistently provides fast and even heat distribution. Muffins brown quickly and evenly--there's no need to turn the sheet midway through baking. Bakers new to aluminized steel should pay extra attention at first, since this heavy-gauge pan bakes muffins more quickly than lighter-gauge varieties. The pan gradually darkens with use, which actually improves heat retention, but it may also require that oven temperatures are lowered by 25 degrees to ensure even browning. The traditional uncoated surface of this sheet makes it extra rugged and a great conductor of heat, but butter, oil, or parchment paper should be used to prevent foods from sticking. Greasing or lining the pan simplifies cleanup, since the pan will go from oven to dishwasher with no scrubbing in between. In the usual Chicago Metallic style, this pan is very well built. Heavy, durable, won't warp in the oven. Yes, it costs more than the cheap ones, but this will perform much better and will last for a very long time. Once you use well-made tools, you'll not want to use anything else!

I am slowly replacing all of my non stick cookware and doing so with the Chicago Metallic line. I have had their bread pans for over a year now and love them. The construction is heavy and can stand up to lots and lots of use. They don't warp like lessor pans when going from cold to hot or vice versa. They clean up very easily.

I have not yet used this muffin pan; however, once I received it I was a bit unhappy to find that there are ridges around the edges of the cups. Since I frequently have overflows with my muffins, these ridges will make it harder to clean up. Other than that, the quality seems good. I like that they are not nonstick. They are not oversized cups - which is nice for portion control.
