I just got two of these pans for Christmas, and have just completed my first bake with them - they are superb! I do a lot of baking, however I have the most pathetic collection of loaf pans known to man - and every one is supposedly non-stick. Not one of them will release a loaf after baking, no matter what you do. So, I finally decided to spring for the real thing and get Chicago Metallics.

Why the hell I waited so long I don't know, but damn, these are magnificent.

And I also wanted to balance the comments of the two reviewers who dis'ed these pans. The reason why they are having such a bad experience with their pans is that they are killing them with kindness. They won't understand what I'm about to say, but the truth is that these pans are NOT supposed to be cleaned to within an inch of their life each time they're used. In fact, the less you clean them, the better! They will soon begin to blacken and become seasoned. Treat them like you would a cast...Read more

I use a double recipe in these, and they bake up a sandwich loaf that is definitely impressive. The pans are heavy weight like good commercial pans should be. They're uncoated, but I've had no issues with sticking. Don't hesitate to purchase these pans if you're serious about baking.

I don't write many reviews, but I really like this Chicago Metallic Commercial II Traditional Uncoated 1 1/2 pound loaf pan.

Because of some of the lower-starred reviews here, I coated the pan with shortening the first time I used it, but after it came out absolutely clean, I decided my usual coating of Pam would probably be fine, and it has been. Not one crumb of my bread has stuck to this wonderful pan. I just wipe it out with a dry towel after using and it's ready for next time.

I have to say that I use this only for yeast (whole wheat sandwich) bread, so haven't baked any sweet quick breads, like banana bread, in it, nor do I intend to. I don't think I'd want 1 1/2 pound loaves of things like that, and already have plenty of the smaller pans.

I have only one of these pans at the moment, but it's not enough, since my dough recipe usually made 5 1-pound loaves, and I look forward to baking all our bread in this larger size.
