High prices and poor quality of store bread inspired me to bake all our bread myself. This is something I had done before but had discontinued. In the interim, I had given away my good bread pans, a pair of large graniteware pans that had survived the 1906 San Francisco earthquake. The only pans I had were either smaller than I liked or light aluminum, so I decided to treat myself to these Chicago Metallic beauties. I love them.
The heavy weight and darker color browns the bottom crust of the bread well, which is something light-colored aluminum pans do not do. They release the bread so cleanly that they barely need washing! I am very happy with the results.
I also have a pair of Chicago Metallic large heavy aluminum baking pans I got about 3 years ago. They get a lot of heavy use and still look new after hundreds of dozens of cookies and many sheets of matzo caramel crunch and double batches of brownies and many loaves of challah. Sometime ago I started baking my own bread because of my dislike for some of the ingredients in commercial bread. Enough said. I have used non-coated and cheap non-stick pans for years. I must say that I really like these new pans a lot better. They are heavy with folded ends to also act as reinforcement. The top has a wide rounded edge. The coating on the inside feels like there is some kind of oil coating but I have come to realize that it is just a very slick surface. I have always used oil and flour to coat a pan before putting in the batter. But, I tried these once without the oil and flour. The bread just dropped out when I turned it over. Now there is a little less work and a lot less mess to my bread making. Sometimes in life one gets ripped off by buying more expensive items BUT sometimes like in this case it buys one a better product. Lets face it, you can buy cheaper pans and they will work for some time but I believe these will last longer and will require less...Read more

Great loaf pan with perfectly square corners. The size is exactly what I was looking for in order to make a larger loaf of bread.
