Foods brown quickly and evenly--there's no need to turn the sheet midway through baking. Bakers new to aluminized steel should pay extra attention at first, since these heavy-gauge pans bakes more quickly than lighter-gauge varieties. The smaller size is perfect for slipping a loaf into a lunch sack. My only disappointment (and this was enough for me to knock off two stars) was the very tiny size of the pans. I have used mini pans for a few years to make Christmas breads for my neighbors and friends. These are so much smaller (at least 50% smaller than the disposable mini bread pans I have been using)than what I am used to that they won't make bread of a size that I can give as a gift. The pans seem little bigger than a large muffin!
