Product Review

A crusty loaf yields easily to this knife, which has serrations big enough to rate, in knife-speak, as "scallops." Though it will do the job, it's not ideal for soft-skinned fruits and vegetables because serrations tends to tear rather than slice. Signature is a moderately priced alternative to Hoffritz's inexpensive steel-handle Platinum line; the steel is of a better grade than that used for Platinum knives, and the blades tend to be thicker. Signature knives are quite heavy and their handles' girth substantial, so small-handed cooks might find them difficult to manipulate. There's a visible gap between this knife's bolster and handle that must be cleaned with care, particularly if the knife is near raw meats or poultry. Both lines have bolsters. --Fred Brack
