Summary: Quality Pan Creates a Beautiful Loaf 2010-01-27
Comment: The design in this Pumpkin Loaf pan is distinctive and it looks great whether on a buffet table for a harvest celebration, bake sale or quick bread gift. Pumpkin bread, gingerbread or spice cake work beautifully. The pan takes the same amount of batter as a 9 x 5 loaf pan, so there is no conversion problem in using favorite recipes for quick breads, and the included recipe is also delicious.
Coat the inside of the pan thoroughly with a cooking spray that contains flour, like Bakers Joy to ensure ease in unmolding. Turn the pan upside down on papertowels so the excess drains out while the batter is being prepared. After removing the pan from the oven let it rest for ten minutes (no longer) on a cooling rack before unmolding. With these steps I have never had a problem with cake sticking to the pan. Also, I've found that using only small pieces of add-ins like nuts, candied ginger or chocolate chips (mini chips) work best. The little pieces stay suspended and do not sink to the bottom obscuring the lovely design. And, as another reviewer mentioned, before putting the pan in the oven, give it a good whack on the counter to release any air bubbles in the batter so all areas of the design are as prominent as possible.
With proper care the pan should last a lifetime, just avoid using metal utensils, harsh scouring pads and always wash by hand to preserve the non-stick surface. This deeply embossed pans somehow takes the most mundane recipe and elevates it. And, I never tire of unmolding a cake or quick bread and seeing the beautiful result - it is so satisfying. This pan also makes a wonderful gift for anyone who loves to bake.

Comment: Of all the Nordicware I've purchased, this one is probably my favorite. It's so much more versatile that just a regular cake pan, mainly because you can either bake a small cake in it, or use it as a bread pan as I normally do. The only trouble you might have with this guy is getting all the stuff out of the crevices. Also, be SURE to tap it on the counter before baking to get out the air holes in the top. Otherwise, it will look like your pumpkin patch has been infested with worm holes! Or, if you have a bunch of little boys to whom you are serving this, they'll think the worm holes are cool! :) anyway, you can't go wrong with this pan - they even include a recipe. This pan was offered by Williams Sonoma last year and now this year, it's more affordable for all of us. Highly, highly recommend!
