I enjoy making Christmas panettone and these pans will allow you to make Colomba Pasquale, Colomba meaning "dove" in Italian, the Eastertime equivalent of panettone. These pans bake up in the oven wonderfully, and the result is a final product that rivals the Colomba Pasquale cakes that sell for up to $35 or more each at Italian delicacy sites and stores. These paper pans even come with the clear bags to wrap and present these in--what more can you ask for.

To make your own Colomba Pasquale, you make the dough and crisscross two dough logs, one slightly larger than the other, one on top of the other, inside the shape of the pan, much easier than freeforming it. Although I have many bread books, I used a simple yet outstanding recipe for Colomba Pasquale found on the King Arthur site. From this, you can make lovely gifts that won't cost you $35!
